Plain Font issue in Mac EN 8.0

Hello,
Contrary to many of the other users of the Mac version of EN 8.0, my
experience has been pretty good so far <knock on wood>. However, I do have a
problem with (or misunderstand of) the way font issues are treated. I have
set my default font to 14 point Genitum. However, I have the following
problems:
1. When I highlight some text and then select Plain Font and Plain Size from
the tool bar, the text is reformatted to 12 point Gentium, instead of 14
point. Does anyone know why?
2. If I select some text and change the font with the Font Palette, the
change will "stick" until I open the record a second time. After that the
font change is lost. This is a major problem when I want to use a specific
font for formatting (such as a Coptic or a special Arabic font). Is this a
bug for a "feature" that I am not understanding properly?
I should point out that this issue does *not* happen with all fonts. I can't
seem to find a pattern however.
3. related to #2, is the fact that if I change the font with the tool bar
(and not the Font Palette), the font does not "stick" at all! This happens
consistently with all fonts.
4. If I change the font with the Font Palette, but later change it to Plant
Font with the tool bar, nothing happens.
