Hello,
How do I change a Word document with EndNote references into text?
One journal discourages use of EndNote because it doesn't play well
with another program they use. If it can be changed to text, they
wouldn't even have to know.
Thanks!

You want the remove field command (control A to select all, then
ctrl+shift+F9 all at once) or try to use the icon on Endnote's toolbar
[#] with a little arrow going up. The endnote toolbar command, in
theory, only removes endnote fields and not other fields, like date.

Make a copy of the document and then go to the EndNote toolbar in word
and choose Remove Field Codes (The sixth icon from the right). This
will change a document to a pure MS Word document with no reference to
EndNote.

What you need to do is unlink all your fields. Endnote has a command for
this in CWYW, but it tends to reformat all your citations, so it's better to
do it yourself.
You need to select all (ctrl+A on a PC) and break the links to all fields
(ctrl+shift+F9). Do this in text *and footnotes too* if you cite in them.
When you press ctrl+A in the body of the text, it doesn't automatically pick
up the text in the footnotes.
